- 1. Preheat the oven to 425 degrees Fahrenheit (220°C). Grease two large baking sheets lightly with cooking spray or line them with parchment paper.
- 2. Place the chips close together on the baking sheets, bowl-side-up. Use only whole chips so the filling doesn’t spill out. Set aside.
- 3. In a large bowl, beat the cream cheese until smooth. Scrape the bottom and sides of the bowl, then mix in the egg until smooth.
- 4. Add 8 ounces of mozzarella along with the sweet corn, chiles, garlic powder, salt, and pepper. Mix well.
- 5. Spoon approximately 1 tablespoon of filling into the “bowl” of each chip. Sprinkle the Parmesan cheese and the remaining mozzarella evenly on top.
- 6. Bake for 13-15 minutes or until the tops begin to brown and the cheese is bubbling. Remove the sheets from the oven, serve immediately, and enjoy!

These are best served fresh from the oven while the cheese is still bubbling. If you’re prepping ahead of time, prepare the filling in advance and refrigerate, then assemble and bake when ready to serve.
